Recipe: Swan House Curry Chicken Salad

I dug up the recipe for that amazing curry chicken salad that Kate served at my shower on Monday . It's from the Swan House in Atlanta (ignore the photo on that page, it looks like the photo to the left but even better).

The water chestnuts make it especially good. Kate recommends adding peanuts and making it a day ahead to let the curry settle.

I have a lovely watercolor of the Swan House hanging in my family room. :) It will be fun to have the recipe too.

I've been looking for a good (nay, GREAT) curried chicken salad recipe, so I'll have to give this one a try. I love the version they have at Whole Paycheck, but I can't afford to spend $9.00 on a lb for it. Now, if I could just find a great pea salad recipe that doesn't have ranch dressing in it...

Looks soo yummy! I'm making it tonight! on a sidenote: with 34 grams of fat and 500+ calories per serving, I'll be making a couple of substitutions ;)
